Battenberg Cake

Gâteau Battenberg

🇬🇧  This cake is very popular in England. The proof: there’s even a special tin designed to bake the yellow and pink batters separately! But unless you’re making Battenberg cakes every week, it’s probably not worth the investment… You can separate the coloured batters with a folded sheet of parchment paper instead. Even though homemade marzipan contains raw egg, the high sugar content allows it to be safely stored at room temperature. But if that worries you, you can use shop-bought marzipan, which will contain pasteurised egg white. This recipe is from my book (in French) Tea Time, published by Mango Editions in September 2024. You can buy it here.

Preparation: 1 hour 15 minutes

Ingredients

For the cake:

  • 4 large eggs
  • 240g plain flour
  • 2 1/2 tsp baking powder
  • 265g caster sugar
  • 80g ground almonds
  • 3 tbsp apricot jam
  • 1 1/2 tsp almond extract
  • Pink food colouring
  • 265g unsalted butter, softened

For the marzipan:

  • 1 egg white
  • 85g icing sugar
  • 135g ground almonds
  • 1/2 tsp almond extract
  • 1 tbsp cornstarch

1. Butter a 20 cm (8-inch) square cake tin. Cut a sheet of parchment paper into a 60 × 20 cm (24 × 8 inch) rectangle. Fold it in half along the short side, then fold again 8 cm (3 inches) from each side of the central fold. You should have three folds. Reinforce the “handle” part of the paper with aluminum foil. Line the tin with this folded paper, creating a divider in the center, with the aluminum foil underneath to support it.

2. Preheat the oven to 170°C fan-assisted. In a stand mixer fitted with a paddle attachment, beat the butter, sugar, and almond extract. Add the eggs and mix again. Sift together the flour, baking powder, and ground almonds, and incorporate them into the batter. Mix until smooth. Divide the batter evenly between two bowls and colour one half pink with food colouring. Pour each batter into one half of the prepared tin. Bake for 35 to 40 minutes, then let cool before removing from the tin.

3. Prepare the marzipan: In a food processor or stand mixer, combine all ingredients except the egg white. Gradually add the egg white until a dough forms — you may not need all of it. Lightly knead the marzipan with some cornstarch until it forms a smooth ball. Wrap in cling film and set aside.

4. Trim the top and sides of the cakes to remove the crust. Cut each cake lengthwise into two equal strips. Warm the apricot jam, then use it to stick one long side of a pink strip to the long side of a yellow strip. Spread more jam on top and place the remaining two strips on top in a checkerboard pattern (pink on yellow, yellow on pink).

5. Dust your work surface with cornstarch and roll out the marzipan into a 30 × 20 cm (12 × 8 inch) rectangle. Using a pastry brush, brush the marzipan with apricot jam. Place the assembled cake in the centre. Wrap the marzipan tightly around the cake and trim any excess where the seam meets.
Smooth the seam with your fingers. Trim both ends of the cake for a neat finish before placing on a serving plate.

Ingrédients

Pour le gâteau :

  • 4 gros œufs
  • 240 g de farine T45
  • 2 1/2 cuillerées à café de levure chimique
  • 265 g de sucre en poudre
  • 80 g de poudre d’amandes
  • 3 cuillerées à soupe de confiture d’abricots
  • 1 1/2 cuillerée à café d’extrait d’amande
  • Du colorant rose
  • 265 g de beurre doux, ramolli

Pour la pâte d’amandes :

  • 1 blanc d’oeuf
  • 85 g de sucre glace
  • 135 g de poudre d’amandes
  • 1/2 cuillerée à café d’extrait d’amande
  • 1 cuillerée à soupe de fécule de maïs

jaune.
