Chicken congee

Congee au poulet

🇬🇧 This is one of those trendy Internet recipes that was nowhere and then it popped up overnight and now I’m seeing it everywhere. It’s like an Asian mix somewhere between risotto and rice pudding, and it tastes like a literal hug, if hugs were seasoned with garlic and ginger. But seriously, this cosy dish is sure to warm you up on a winter day, and you can add anything to it! I used some leftover cooked chicken and stock but you could use whatever protein your heart desires.


🇫🇷 Voici un plat très en vogue sur Internet qui Ă©tait quasiment inconnu et puis il est apparu tout d’un coup pendant la nuit et maintenant je le vois partout. C’est comme un mĂ©lange asiatique, entre le risotto et le riz au lait, et il a littĂ©ralement le goĂ»t d’un câlin, si les câlins Ă©taient assaisonnĂ©s d’ail et de gingembre. Mais sĂ©rieusement, ce plat bien cocooning va certainement vous rĂ©chauffer en hiver, et vous pouvez l’agrĂ©menter de tout ce que vous voulez ! J’ai mis des restes de poulet cuit et son bouillon mais vous pouvez ajouter tout ce qui vous fait plaisir.

Ingredients

For the stock:

  • 2 chicken thighs
  • 1 onion
  • 1 small bunch parsley
  • 3cm piece ginger
  • 1 tsp fennel seeds
  • 1/2 tsp ground coriander
  • 1.5 l water
  • Salt and peps

For the congee:

  • 120g short grain rice (I used basmati)
  • 1/4 tsp salt
  • 2cm piece ginger
  • 1 garlic clove
  • 2 spring onions
  • 5 dried mushrooms
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp fried onions
  • 1 egg
  • Hot sauce and fresh coriander for serving

1. The day before, wash and drain the rice and place in the freezer in a ziploc bag. Frozen rice will be quicker to break down into a soup-like consistency.
2. The next day, place the chicken thighs, onion cut in half, parsley, ginger, fennel seeds, ground coriander and water in a large pot and bring to the boil. Season with salt and pepper then lower the heat. Simmer for 40 minutes then leave to stand for 10 minutes before straining. Shred the chicken.
3. Soak the dried mushrooms in a small bowl of water. Grate the ginger and garlic and slice 1 spring onion. Finely chop the rehydrated mushrooms. Add these to the pot and fry gently without adding any oil.
4. Add the frozen rice, salt and 1.2 l of the stock. Bring to the boil then reduce the heat, cover and cook for around 30 minutes, stirring regularly, until the rice has broken down.
5. 10 minutes before the end of the cooking time, bring a saucepan of water to the boil and cook the egg for 7 minutes. Peel and cut in half.
6. Season the congee with the soy sauce and sesame oil. Serve with the shredded chicken, sliced spring onion, fried onions, hot sauce, coriander and half a jammy egg.

Ingrédients

Pour le bouillon :

  • 2 cuisses de poulet
  • 1 oignon
  • 1 petite botte de persil
  • 3 cm de gingembre
  • 1 c. Ă  cafĂ© de graines de fenouil
  • 1/2 c. Ă  cafĂ© de coriandre moulue
  • 1,5 l d’eau
  • Sel et poivre

Pour le congee :

  • 120 g de riz (j’ai utilisĂ© du basmati)
  • 1/4 c. Ă  cafĂ© de sel
  • 2 cm de gingembre
  • 1 gousse d’ail
  • 2 cĂ©bettes
  • 5 champignons noirs dĂ©shydratĂ©s
  • 2 c. Ă  soupe de sauce soja
  • 2 c. Ă  soupe d’huile de sĂ©same
  • 2 c. Ă  soupe d’oignons frits
  • 1 Ĺ“uf
  • De la sauce piquante et de la coriandre fraĂ®che pour servir

1. La veille, rincez et essorez le riz puis placez-le au congélateur dans un sac fermé. Le riz congelé se réduira plus vite en soupe à la cuisson.
2. Le lendemain, dans une marmite, déposez les cuisses de poulet, l’oignon coupé en deux, le persil, le gingembre, les graines de fenouil, la coriandre moulue et l’eau puis portez à ébullition. Assaisonnez de sel et de poivre puis baissez le feu. Laissez frémir pendant 40 minutes puis laissez reposer 10 min avant d’égoutter. Effilochez le poulet.
3. Trempez les champignons déshydratés dans un petit bol d’eau. Râpez finement le gingembre et l’ail puis taillez 1 cébette en rondelles. Émincez finement les champignons essorés. Déposez ces ingrédients dans la marmite et faites revenir sans ajout d’huile.
4. Ajoutez le riz congelé, le sel et 1,2 l du bouillon. Portez à ébullition puis baissez le feu et laissez cuire à couvert environ 30 min en mélangeant régulièrement, jusqu’à ce que le riz s’est réduit en soupe.
5. 10 minutes avant la fin de la cuisson, portez une casserole remplie d’eau à ébullition et faites-y cuire l’œuf pendant 7 minutes. Écalez et coupez-le en deux.
6. Assaisonnez le congee de sauce soja et d’huile de sésame. Servez avec le poulet effiloché, de la cébette ciselée, des oignons frits, de la sauce piquante, de la coriandre et un demi-œuf mollet par personne.
