Mousse au chocolat avec éclats de caramel au kasha
🇬🇧 Chocolate mousse is one of my favourite desserts but this was actually the first time I made it myself! I like my mousse with 70% dark chocolate and a bit of crunch. These caramel shards are covered with toasted buckwheat, which in my opinion makes this a healthy dessert😌
🇫🇷 La mousse au chocolat est l’un de mes desserts préférés mais en fait c’est la première fois que je la fais maison ! J’aime la mousse au chocolat noir 70 % et avec un peu de croquant. Ces éclats de caramel sont saupoudrés de sarrasin grillé, ce qui à mon avis rend ce dessert sain 😌

Ingredients
For the chocolate mousse:
- 4 eggs
- 130g 70% dark chocolate
- 30g unsalted butter
- 1 ½ tbsp icing sugar
- 1 tonka bean
For the caramel shards:
- 150g caster sugar
- 2 tbsp water
- 1 tbsp kasha (toasted buckwheat)
- Separate the egg whites from the egg yolks. Whisk the whites to form stiff peaks then add the icing sugar and whisk until well incorporated.
- Melt the chocolate and butter over a bain-marie or in the microwave. Mix in the egg yolks and the finely grated tonka bean.
- Fold in the egg whites then pour the mousse into bowls or ramekins and refrigerate for at least 3 hours.
- Meanwhile, make the caramel shards. Line a baking sheet with parchment paper. Pour the water into a metal saucepan (do not use non-stick as the caramel could burn the coating off). Pour over the sugar in an even layer then place over a medium heat and leave until the sugar dissolves and the caramel takes on a light brown colour. Do not stir or move the pan or sugar crystals will form. Have a bowl of cold water ready in the sink to plunge the saucepan into to stop the caramel from cooking any further. It will turn very quickly from brown to burnt so you must stop it from cooking in the residual heat of the pan.
- Pour the caramel onto the parchment-lined baking sheet and sprinkle over the kasha. Leave to harden then cut into pieces with a sharp knife. Serve the caramel shards with the chocolate mousse.

Ingrédients
Pour la mousse au chocolat :
- 4 œufs
- 130 g de chocolat noir 70 %
- 30 g de beurre doux
- 1 ½ c. à soupe de sucre glace
- 1 fève tonka
Pour les éclats de caramel :
- 150 g de sucre en poudre
- 2 c. à soupe d’eau
- 1 c. à soupe de kasha (sarrasin grillé)
1. Séparez les blancs d’œufs des jaunes. Battez les blancs en neige puis incorporez le sucre glace et mélangez jusqu’à ce que tout soit homogène.
2. Faites fondre le chocolat et le beurre au bain-marie ou au micro-ondes. Incorporez les jaunes d’œufs et la fève tonka finement râpée.
3. Incorporez les blancs d’œufs au mélange chocolat puis versez la mousse dans des bols ou des ramequins et placez au frais pour au moins 3 heures.
4. Pendant ce temps, réalisez les éclats de caramel. Tapissez une plaque de cuisson de papier sulfurisé. Versez l’eau dans une casserole en inox (ne pas utiliser de casserole antiadhésive car le caramel pourrait l’abîmer). Versez le sucre par-dessus dans une couche homogène puis faites chauffer sur feu moyen jusqu’à ce que le sucre soit dissous et que le caramel développe une couleur ambrée. Ne pas mélanger ni bouger la casserole pour éviter la cristallisation du sucre. Préparez un saladier d’eau froide à côté et plongez-y la casserole pour stopper la cuisson du caramel. Ce dernier peut vite brûler donc il faut vite stopper la cuisson.
5. Versez le caramel sur la plaque recouverte de papier sulfurisé et saupoudrez de kasha. Laissez durcir puis découpez en morceaux avec un couteau aiguisé. Servez les éclats de caramel avec la mousse au chocolat.
