Chocolate and passion fruit cream puffs

🇬🇧 Here we go, it’s my first post on this blog and I wanted to share with you my recipe for these adorable little cream puffs that are inspired by the famous Mogador macarons at the Pierre HermĂ© pâtisserie in Paris. I love the flavour combination of chocolate and passion fruit and I wanted to try them out in one of my favourite bakes – cream puffs! In these little bitesize delights a little puff of choux pastry is filled with chocolate whipped ganache, topped with craquelin, to add crunch, and a thin layer of passion fruit jelly. I promise, not all my recipes are this long! Save this one for a rainy Sunday.

J’adore l’association des saveurs chocolat et fruit de la Passion et je voulais les essayer dans une de mes pâtisseries prĂ©fĂ©rĂ©es, les petits choux ! Dans ces petites bouchĂ©es on retrouve un petit chou ornĂ© de craquelin, pour donner une touche croustillante, garni de ganache montĂ©e au chocolat et d’une fine couche de gelĂ©e aux fruits de la Passion. Promis, toutes mes recettes ne sont pas aussi longues ! RĂ©servez celle-ci pour un dimanche pluvieux.


🇬🇧 For 30 cream puffs
Preparation time: 2 hours
Resting time: 4 heures
Cooking time: 25 minutes

Ingredients

For the choux pastry:

  • 140g plain flour
  • 4 eggs
  • 150ml semi-skimmed milk
  • 100ml water
  • 110g unsalted butter
  • 2 tbsp caster sugar
  • Pinch salt

For the craquelin:

  • 50 g plain flour
  • 40 g softened unsalted butter
  • 50g brown sugar

For the whipped ganache:

  • 330ml double cream
  • 100g dark chocolate, 70 % cocoa solids

For the passion fruit jelly:

  • 180g thick passion fruit juice
  • 2 passion fruits
  • 3 gelatine sheets (6g)

1. Prepare the whipped ganache: break the chocolate up into squares and place in a bowl. Pour 110ml of the cream into a saucepan and bring to the boil. Pour the hot cream over the chocolate and mix until melted. Next, add the rest of the cream (220ml). Refrigerate for 4 hours.

2. Prepare the jelly: rehydrate the gelatine sheets in a bowl of cold water. Cut the passion fruits in half and scoop out the pulp. Put the pulp in a saucepan with the passion fruit juice. Bring to the boil then remove from the heat. Squeeze the water out of the gelatine sheets and add to the saucepan. Mix until melted. Pour the mixture into a large container about 1/2cm high. I used two rectangular brownie time. Refrigerate for 4 hours.

3. Prepare the craquelin: put the flour, butter and brown sugar in a bowl and rub together as if making a crumble. Then, form a ball with the mixture. Place the dough between two sheets of greaseproof paper and roll out as thin as possible. Place on a baking tray and put in the freezer for 1 hour.

4. Preheat the oven to 180°C. Prepare the choux pastry: cut the butter into cubes and put them in a saucepan with the salt, milk, water and sugar. Bring to the boil and mix until the butter is melted. Remove from the heat and add the flour. Stir quickly with a wooden spoon until a thick dough like a roux forms. Place the saucepan back on a low heat and mix to dry out the dough a little. It should pull away from the sides of the pan. Transfer the dough into a bowl, or a stand mixer and beat in the eggs until the mixture is smooth and glossy.

5. Transfer the choux pastry dough into a pastry bag fitted with a round tip. Pipe 30 choux puffs on baking trays lined with greaseproof paper. You can make them whatever size you like, but mine were about 4cm in diameter.

6. Take the craquelin out of the freezer and using a cookie cutter that is a bit smaller than your choux puffs, cut out 30 craquelin disks. Place a disk on top of each choux puff. Bake for 25 minutes. Leave to cool on a wire rack.

7. Take the ganache out of the fridge and beat with an electric whisk or in a stand mixer until the ganache is really thick and the whisk leaves a trail. Transfer the ganache, which is now a whipped ganache, into a pastry bag fitted with a round tip, slightly smaller than the one used for the choux puffs. Take each choux puff and poke the pastry tip into the bottom and fill with ganache.

8. Take the jelly out of the fridge and using the same cookie cutter you used for the craquelin, cut out disks in the jelly. Place these on top of each choux puff and enjoy! Keep these choux puffs in the fridge. They will last two or three days but will soften after a day.

Tips :

– The craquelin melts very quickly so if you have spread it over two baking trays in the freezer, take one out at a time to cut out the disks. They will be easier to handle.

– You can use passion fruit purĂ©e to make the jelly but you will have to go to a specialised shop that stocks patisserie ingredients to buy it. I prefer to use ingredients I find at the supermarket 🙂

Préparation : 2 heures
Repos : 4 heures
Cuisson : 25 minutes

Ingrédients

Pour la pâte à choux :

  • 140 g de farine T65
  • 4 Ĺ“ufs
  • 15 cl de lait
  • 10 cl d’eau
  • 110 g de beurre doux
  • 2 c. Ă  s. de sucre semoule
  • 1 pincĂ©e de sel

Pour le craquelin :

  • 50 g de farine
  • 40 g de beurre doux ramolli
  • 50 g de cassonade

Pour la ganache montée :

  • 33 cl de crème liquide
  • 100 g de chocolat noir Ă  70 %

Pour la gelée aux fruits de la Passion :

  • 180 g nectar de fruits de la Passion
  • 2 fruits de la Passion
  • 3 feuilles de gĂ©latine (6 g)

1. PrĂ©parez la ganache montĂ©e : cassez le chocolat en morceaux et dĂ©posez dans un saladier. Versez 11 cl de la crème dans une casserole et portez Ă  Ă©bullition. Versez sur le chocolat et mĂ©langez jusqu’Ă  ce que tout le chocolat soit fondu. Ensuite, ajoutez le reste de la crème (22 cl). RĂ©servez au rĂ©frigĂ©rateur pendant 4 heures.

2. PrĂ©parez la gelĂ©e : trempez les feuilles de gĂ©latine dans un bol d’eau. PrĂ©levez la pulpe des fruits de la Passion et dĂ©posez dans une casserole avec le jus de fruits. Portez Ă  Ă©bullition puis Ă´tez du feu. Essorez la gĂ©latine et ajoutez-la Ă  la casserole. MĂ©langez jusqu’Ă  la faire fondre. Versez la prĂ©paration dans un grand plat Ă  environ 0,5 cm de hauteur. J’ai utilisĂ© deux moules rectangulaires Ă  brownie. RĂ©servez 4 h au rĂ©frigĂ©rateur.

3. PrĂ©parez le craquelin : mĂ©langez la farine, le beurre et la cassonade du bout des doigts jusqu’Ă  obtenir une pâte sableuse, puis formez une boule. Étalez la pâte très finement entre 2 feuilles de papier sulfurisĂ©, placez sur une plaque et laissez reposer 1 heure au congĂ©lateur.

4. PrĂ©chauffez le four Ă  180 °C. PrĂ©parez la pâte Ă  choux : Coupez le beurre en dĂ©s et dĂ©posez-les dans une casserole avec le sel, le lait, l’eau et le sucre. Portez Ă  Ă©bullition tout en mĂ©langeant pour faire fondre le beurre. Ă”tez du feu et ajoutez la farine. MĂ©langez vite Ă  la cuillère en bois. Remettez la casserole sur feu doux et mĂ©langez pour dessĂ©cher la pâte qui doit se dĂ©tacher des parois. Mettez la pâte dans un saladier ou dans un robot pâtissier. Ajoutez les oeufs et mĂ©langez au batteur Ă©lectrique jusqu’Ă  obtenir une pâte homogène et brillante.

5. Transvasez la pâte dans une poche munie d’une douille unie. Pochez 30 choux sur des plaques de cuisson chemisĂ©es de papier sulfurisĂ©.

6. Avec un emporte-pièce plus petit que vos choux, détaillez 30 disques de craquelin. Placez un disque sur chaque choux. Enfournez les choux et faites cuire 25 minutes. Laissez refroidir sur une grille.

7. Sortez la ganache du rĂ©frigĂ©rateur et battez au fouet Ă©lectrique jusqu’Ă  obtenir une consistance Ă©paisse dont le fouet laisse une empreinte. Transvasez la ganache, qui est maintenant une ganache montĂ©e, dans une poche Ă  douille munie d’une petite douille unie (plus petite que celle utilisĂ©e pour pocher les choux). Prenez chaque chou et enfoncez la douille dans le dessous et pochez un peu de ganache.

8. Sortez la gelĂ©e du rĂ©frigĂ©rateur et dĂ©taillez des disques avec le mĂŞme emporte-pièce utilisĂ© pour dĂ©couper le craquelin. Posez les disques de gelĂ©e sur les choux et dĂ©gustez ! RĂ©servez ces petits choux au rĂ©frigĂ©rateur. Vous pouvez les garder deux ou trois jours mais ils vont ramollir au bout d’un jour.

Astuces :

– Le craquelin fond très vite donc si vous l’avez mis sur deux plaques au congĂ©lateur, sortez une plaque Ă  la fois pour les dĂ©couper. Les disques seront plus faciles Ă  manipuler.

– Vous pouvez utiliser de la purĂ©e de fruits de la Passion pour rĂ©aliser la gelĂ©e mais il faudra aller en boutique spĂ©cialisĂ©e pour en trouver. Je prĂ©fère utiliser des ingrĂ©dients que je trouve au supermarchĂ© 🙂
