Naked cake à la lavande et aux mûres avec une ganache montée au chocolat blanc
🇬🇧 Was it worth getting attacked by brambles in the forest to make this blackberry and lavender jam? Yes. Because now I have enough jam to last me til Christmas. I used my new favourite Japanese chiffon cake recipe which is so spongy and light, then I decided it was time to try white chocolate ganache again. I wasn’t going to let it beat me this time and I did it! I made this cake in two 8-inch tins.
🇫🇷 Est-ce que ça valait la peine de me faire attaquer par des ronces dans la forêt pour faire cette confiture aux mûres et à la lavande ? Oui. Parce que maintenant j’ai assez de confiture à manger jusqu’à Noël. J’ai utilisé ma dernière recette préférée de chiffon cake à la japonaise qui est si spongieux et aérien, puis j’ai décidé qu’il était temps de retenter une ganache au chocolat blanc. Je n’allais pas la laisser me battre cette fois, et ça y est j’ai réussi ! J’ai réalisé ce gâteau dans deux moules de 20 cm.

🇬🇧 For 6-8 people

Ingredients
For 2 x 8-inch chiffon cakes (or 3 x 6-inch)
- 8 eggs, cold (or 6)
- 145g caster sugar (or 110g)
- 60ml sunflower oil (or 45ml)
- 80ml milk (or 60ml)
- 145g plain flour (or 110g)
- 2 tsp baking powder (or 1 ½ tsp)
- 1 tsp dried lavender
For the jam (1 jar):
- 350g blackberries
- 60g honey
- Juice of 1/2 lemon
- 1 tsp dried lavender
For the whipped ganache:
- 280ml double cream, cold
- 200g white chocolate
For the decoration:
- 100g blackberries
1. First, make the jam. This step can be done several days in advance. Place a clean jar in the oven at 180°C for 15 minutes to sterilise. Wash the blackberries and place them in a saucepan with the honey, lemon juice and lavender. Bring to the boil, then mash the fruit with a potato masher. Cook for around 10 minutes until the jam has thickened. It will carry on thickening as it cools so don’t worry if it isn’t quite jam consistency at this point. Pour the hot jam into the sterilised jar. Seal once cooled and place in the fridge.
2. The day before you make the cake, make the white chocolate ganache. It needs to chill overnight in order for you to be able to whip it. Heat 100ml of the cream in a saucepan until it reaches boiling point. Melt the white chocolate in a bowl in the microwave. Pour the hot cream over the melted chocolate and stir with a spatula or wooden spoon until well combined. Pour over the remaining 180ml cream and mix well. Cover with cling film, sticking to the surface of the ganache, and place in the fridge overnight.
3. The next day, make the chiffon cakes. Preheat the oven to 180°C. Line the base of 2 x 8-inch tins with baking paper. Do not grease the sides (see tip). Separate the eggs into two large bowls. Whisk the yolks with half of the sugar, then slowly pour in the oil while whisking constantly. Add the milk and mix until well incorporated. Sift in the flour and baking powder and whisk until well combined. Blitz the dried lavender in a food processor until it turns to a powder and add to the cake batter. Beat the egg whites to stiff peaks, then add the remaining sugar. Fold into the egg yolk mix. Divide the cake batter equally between the 2 tins. Place in the oven and lower the heat to 170°C. Bake for 25 minutes, or until golden. A knife inserted into the cakes should come out clean. Leave to cool on racks upside down.
4. Gently run a palette knife around the cakes to release from the tins. Brush away any crumbs around the sides of the cakes. In a stand mixer or with an electric whisk, beat the cold white chocolate ganache starting slowly and gradually increasing the speed for around 10 minutes, or until thickened.
5. Place the first cake layer on an icing turntable or serving plate. Spread over 1/4 of the ganache and cover with 2 tbsp jam. Repeat with the second layer. Place the final cake layer on top and spoon on the remaining ganache. Spread the ganache on top and in a thin layer on the sides. Run a cake scraper around the side to smooth. Decorate with blackberries and flowers if you wish. Chill for at least 2 hours before serving.
Tip
I recommend baking chiffon cake in anodised aluminium tins that do not have a non-stick coating. In order to achieve the characteristic texture and flat top, the cake must stick to the sides of the tin as it rises. Whatever kind of tin you use, do not grease the sides.

Pour 2 x chiffon cakes de 20 cm (ou 3 x 15 cm)
- 8 oeufs, froids (ou 6)
- 145 g de sucre en poudre (ou 110 g)
- 6 cl d’huile de tournesol (ou 4,5 cl)
- 8 cl de lait (ou 6 cl)
- 145 g de farine T45 (ou 110 g)
- 2 c. à café de levure chimique (ou 1 ½ c. à café)
- 1 c. à café de lavande séchée
Pour la confiture (1 bocal) :
- 350 g de mûres
- 60 g de miel
- Le jus de 1/2 citron
- 1 c. à café de lavande séchée
Pour la ganache montée :
- 28 cl de crème liquide 30 % MG, froide
- 200 g de chocolat blanc
Pour la déco :
- 100 g de mûres
1. Tout d’abord, réalisez la confiture. Cette étape peut se faire plusieurs jours d’avance. Enfournez un bocal propre à 180 °C pendant 15 minutes pour le stériliser. Lavez les mûres et déposez-les dans une casserole avec le miel, le jus de citron et la lavande. Portez à ébullition, puis écrasez les fruits au presse-purée. Laissez cuire pendant environ 10 minutes jusqu’à ce que la confiture s’épaississe. Elle s’épaissira davantage pendant qu’elle refroidit, ainsi ne vous inquiétez pas si elle n’a pas encore atteint la consistance de confiture à ce stade. Versez la confiture chaude dans le bocal stérilisé. Fermez une fois qu’elle aura refroidi et placez au réfrigérateur.
2. La veille de faire le gâteau, réalisez la ganache au chocolat blanc. Elle doit se reposer au réfrigérateur pendant une nuit afin que vous puissiez la battre en chantilly. Faites chauffer 10 cl de la crème dans une casserole jusqu’à ébullition. Faites fondre le chocolat blanc dans un bol au micro-ondes. Versez la crème chaude sur le chocolat fondu et mélangez à la spatule ou à la cuillère en bois. Versez les 18 cl de crème restante et mélangez bien. Filmez au contact et placez au réfrigérateur une nuit.
3. Le lendemain, réalisez les chiffon cakes. Préchauffez le four à 180 °C. Chemisez de papier sulfurisé le fond de 2 moules de 20 cm. Ne beurrez pas la paroi (voir astuce). Séparez les oeufs dans deux saladiers. Battez les jaunes avec la moitié du sucre, puis versez lentement l’huile en fouettant sans cesse. Ajoutez le lait et mélangez jusqu’à obtenir une pâte homogène. Ajoutez la farine et la levure tamisées et fouettez jusqu’à homogène. Dans un mixeur, mixez la lavande séchée pour la réduire en poudre. Ajoutez cette dernière à la pâte. Montez les blancs d’oeufs en neige ferme, puis incorporez le sucre restant. Incorporez délicatement au mélange aux jaunes d’oeufs. Répartissez la pâte entre les 2 moules. Enfournez puis baissez la température à 170 °C. Laissez cuire pendant 25 minutes, ou jusqu’à ce que les gâteaux soient dorés. La lame d’un couteau insérée dans les gâteaux doit en ressortir sèche. Retournez et laissez refroidir sur une grille à l’envers.
4. Glissez un couteau palette sur le contour des gâteaux pour les libérer des moules. Balayez les miettes sur le bord des gâteaux. Dans un robot pâtissier ou avec un batteur électrique, battez la ganache au chocolat blanc en commençant lentement et en augmentant progressivement la vitesse pendant 10 minutes, jusqu’à épaississement.
5. Déposez la première couche de gâteau sur un plateau tournant ou un plat de service. Étalez par-dessus 1/4 de la ganache et recouvrez de 2 c. à soupe de confiture. Renouvelez l’opération avec la deuxième couche de gâteau. Déposez la dernière couche de gâteau et ajoutez la ganache restante. Étalez la ganache sur le haut et en une fine couche sur les côtés. Lissez avec un lisseur à gâteau. Décorez avec des mûres et des fleurs si vous souhaitez. Laissez reposer au moins 2 heures avant de servir.
Astuce
Je recommande de cuire les chiffon cakes dans des moules en aluminium anodisé qui n’ont pas de revêtement antiadhésif. Il est seulement possible d’obtenir la texture et le dessus parfaitement plat, caractéristiques de ce gâteau, si le gâteau colle au moule lorsqu’il monte au four. Peu importe le moule que vous utilisez, ne graissez pas la paroi.
