Chocolate and Earl Grey crémeux tart

Tarte au crémeux au chocolat et à l’Earl Grey

🇬🇧 This tart has a cocoa pâte sablée flavoured with ground Earl Grey tea and a chocolate crémeux also infused with tea. Crémeux is a crème anglaise mixed with chocolate and it features in many entremets in French pâtisserie.


🇫🇷 Cette tarte se compose d’une pâte sablée au cacao parfumé avec du thé Earl Grey moulu et d’un crémeux au chocolat qui est aussi infusé au thé. Le crémeux est une crème anglaise mélangée au chocolat et il figure dans beaucoup d’entremets de la pâtisserie française.

Ingredients

For the pastry:

  • 150g buckwheat flour
  • 100g plain flour
  • 125g cold unsalted butter
  • 1 tbsp Earl Grey tea
  • 2 tbsp cocoa powder
  • 60g caster sugar
  • 1 egg yolk
  • 3 tbsp cold water
  • Pinch salt

For the crémeux:

  • 180g double cream
  • 120g milk
  • 1 tbsp Earl Grey tea
  • 3 egg yolks
  • 30g caster sugar
  • 120g dark chocolate

For the decoration:

  • 80g double cream
  • 1 tbsp cocoa nibs
  • 1 tbsp edible dried flowers (rose petals, cornflower, marigold etc.)

1. The day before, combine the cream, milk and Earl Grey tea in a container and refrigerate overnight.
2. Prepare the pastry. Grind the Earl Grey tea to a powder in a blender. Combine both flours in a mixing bowl with the salt, cocoa powder and ground Earl Grey tea. Cut the butter into cubes and rub into the flour mixture until it resembles breadcrumbs. Add the sugar, the egg yolk and the water and mix to form a dough. Roll the dough into a ball and flatten it slightly. Wrap in clingfilm and refrigerate for 30 minutes.
3. Roll the dough out into a circle measuring around 26cm. Line a 22cm tart tin with the pastry and run your rolling pin over the top to remove the excess pastry. This trick always ensures my pastry doesn’t shrink in the oven. Place in the fridge for a further 30 minutes.
4. Preheat the oven to 170 °C. Cover the pastry with baking paper and baking beans and bake blind for 25 minutes. Leave to cool.
5. Prepare the filling. Strain the cream mixture and discard the soaked tea. Cut the chocolate into small pieces.
6. Whisk together the egg yolks and sugar. Pour the cream mixture into a saucepan and bring to the boil then pour over the eggs. Whisk until no lumps remain then return the mixture to the pan. Cook the cream on a medium heat until thickened, while whisking continuously.
7. Place the chopped chocolate into a large bowl then pour over the thickened cream. Leave to cool slightly then blend using a hand blender. Pour the crémeux into the baked pastry case and refrigerate for at least 4 hours. Place a bowl and electric whisk attachment in the fridge for the chantilly.
8. Pour the remaining double cream into the chilled bowl and whip with an electric whisk until stiff peaks form. Decorate the tart with the whipped cream, cocoa nibs and edible flowers.

Pour la pâte :

  • 150 g de farine de sarrasin
  • 100 g de farine T45
  • 125 g de beurre doux froid
  • 1 c. à soupe de thé Earl Grey
  • 2 c. à soupe de cacao en poudre
  • 60 g de sucre en poudre
  • 1 jaune d’œuf
  • 3 c. à soupe d’eau froide
  • Une pincée de sel

Pour le crémeux :

  • 180 g de crème liquide 30 % MG
  • 120 g de lait
  • 1 c. à soupe de thé Earl Grey
  • 3 jaunes d’œufs
  • 30 g de sucre en poudre
  • 120 g de chocolat noir

Pour le décor :

  • 80 g de crème liquide froide 30 % MG
  • 1 c. à soupe de grué de cacao
  • 1 c. à soupe de fleurs séchées comestibles (pétales de rose, bleuet, souci)

1. La veille, dans un récipient mélangez ensemble la crème, le lait et le thé Earl Grey et placez au frais pour la nuit.
2. Préparez la pâte. Mixez le thé Earl Grey dans un blender pour le réduire en poudre. Dans un saladier, mélangez ensemble les deux farines avec le sel, le cacao en poudre et le thé Earl Grey moulu. Découpez le beurre en dés et mélangez-le à la farine jusqu’à obtenir un mélange sableux. Ajoutez le sucre, le jaune d’œuf et l’eau puis mélangez pour former une pâte. Façonnez la pâte en une boule et aplatissez-la légèrement. Filmez et laissez reposer au frais pour 30 minutes.
3. Abaissez la pâte en un cercle d’environ 26 cm. Foncez un moule à tarte de 22 cm et roulez le rouleau à pâtisserie par-dessus pour retirer l’excès de pâte. Cette astuce empêche la pâte de rétrécir au four. Placez au frais encore 30 minutes.
4. Préchauffez le four à 170 °C. Tapissez la pâte de papier sulfurisé et garnissez de billes en céramique ou de haricots. Enfournez à blanc pour 25 minutes. Laissez refroidir.
5. Préparez la garniture. Filtrez la crème et retirez le thé. Concassez le chocolat en petits morceaux.
6. Blanchissez les jaunes d’œufs avec le sucre. Versez la crème dans une casserole et portez à ébullition. Versez sur les œufs. Fouettez jusqu’à ce qu’il n’y ait plus de grumeaux puis reversez dans la casserole. Faites cuire la crème sur feu moyen jusqu’à épaississement, en fouettant constamment.
7. Déposez le chocolat concassé dans un saladier puis versez la crème épaissie par-dessus. Laissez refroidir un peu puis mixez à l’aide d’un bras mixeur. Versez le crémeux sur le fond de tarte et laissez reposer au frais au moins 4 heures. Pour préparer la chantilly, placez un saladier et le fouet d’un batteur électrique au réfrigérateur.
8. Versez la crème restante dans le saladier froid et battez en chantilly. Décorez la tarte avec la chantilly, le grué de cacao et les fleurs séchées.
