Cheesecake à la vanille et compotée de rhubarbe et fraises
🇬🇧 Although I prefer a baked cheesecake, my oven is not cooperating, so non-baked it is. Rhubarb and strawberry come together in this beautiful compotée spiced with cardamom, vanilla and ginger. If you can find it, use forced rhubarb, which is more red than green. Did you know forced rhubarb is covered to limit its exposure to the sun which turns the branches green?
🇫🇷 Même si je préfère le cheesecake cuit, mon four ne veut pas jouer le jeu en ce moment. La rhubarbe et la fraise se marient à merveille dans cette belle compotée parfumée à la cardamome, à la vanille et au gingembre. Si vous arrivez à en trouver, choisissez la rhubarbe « forcée » qui est plus rouge que verte. Savez-vous que la rhubarbe forcée est couverte pour limiter son exposition au soleil qui rend les branches vertes ?

Ingredients
- 250 g palets bretons biscuits or digestives
- 140 g unsalted butter
- 30 g porridge oats
- 400 ml double cream, chilled
- 600 g cream cheese
- 100 g caster sugar
- Juice of 1/2 lemon
- 1 tbsp vanilla paste
For the compotée :
- 250 g red rhubarb
- 10 strawberries
- 250 ml water
- 50 g caster sugar
- 25 g fresh ginger
- 1/2 tsp cardamom
- 1/2 tbsp vanilla paste
1. Place a metal bowl and electric whisk attachment in the fridge.
2. Wash the rhubarb and strawberries. Cut the rhubarb into 3 cm chunks on a diagonal. Hull the strawberries and cut in half. Peel the ginger and grate finely.
2. Pour the water into a saucepan along with the sugar, ginger, cardamom and vanilla. Bring to the boil, then lower the heat and add the rhubarb. Cook for 3-4 minutes until tender. Leave to cool, then add the strawberries and chill in the fridge overnight to assemble the cheesecake the following day.
3. Blitz the biscuits in a blender or crush in a bag with a rolling pin. Melt the butter in a saucepan on low heat. Add the biscuit crumbs and the oats. Stir to combine.
4. Grease and line an 8-inch springform tin with greaseproof paper on the base and round the sides. Press the buttery biscuit crumbs into the bottom of the tin and up the sides. Press down with a measuring cup. Chill in the fridge while you prepare the filling.
5. Pour the double cream into the chilled metal bowl and whisk until you have firm whipped cream.
6. In a separate bowl, beat together the cream cheese, sugar, lemon juice and vanilla. Fold the whipped cream into this mixture, taking care not to beat out any of the air.
7. Pour the cream filling into the biscuit base and smooth over the top. Refrigerate overnight.
8. The following day, carefully remove the cheesecake from the tin. Pour the fruit compotée on top and serve.

Ingrédients
- 250 g de palets bretons
- 140 g de beurre doux
- 30 g de flocons d’avoine
- 40 cl de crème liquide (30 % MG), froide
- 600 g de cream cheese
- 100 g de sucre en poudre
- Le jus d’1/2 lemon
- 1 c. à soupe de pâte de vanille
Pour la compotée :
- 250 g de rhubarbe rouge
- 10 fraises
- 25 cl d’eau
- 50 g de sucre en poudre
- 25 g de gingembre frais
- 1/2 c. à café de cardamome
- 1/2 c. à soupe de pâte de vanille
1. Placez un bol en inox et le fouet d’un batteur électrique au réfrigérateur.
2. Lavez la rhubarbe et les fraises. Coupez la rhubarbe en tronçons de 3 cm en biais. Équeutez les fraises et coupez-les en deux. Pelez le gingembre et râpez-le finement.
2. Versez l’eau dans la casserole avec le sucre, le gingembre, la cardamome et la vanille. Portez à ébullition, puis baissez le feu et ajoutez la rhubarbe. Faites cuire 3-4 minutes jusqu’à ce qu’elle soit tendre. Laissez refroidir, puis ajoutez les fraises et placez au réfrigérateur pour la nuit pour monter le cheesecake le lendemain.
3. Mixez les palets bretons dans un blender ou réduisez-les en miettes dans un sac de congélation à l’aide d’un rouleau à pâtisserie. Dans une casserole à feu doux faites fondre le beurre. Ajoutez les miettes de biscuits et les flocons d’avoine. Mélangez jusqu’à ce que tout soit enrobé de façon homogène.
4. Beurrez et chemisez un moule à charnières de 20 cm de papier sulfurisé sur le fond et sur la paroi. Tassez les miettes de biscuits beurrées dans le fond et sur les côtés. Tassez bien avec une cuillère doseuse. Faites refroidir au réfrigérateur pendant que vous préparez la garniture.
5. Versez la crème dans le bol en inox froid et battez jusqu’à obtenir une crème fouettée ferme.
6. Dans un autre bol, battez ensemble le cream cheese, le sucre, le jus de citron et la vanille. Incorporez la crème fouettée à ce mélange, en prenant soin de ne pas chasser l’air.
7. Garnissez le fond de biscuits de crème et lissez la surface. Placez au réfrigérateur pour toute la nuit.
8. Le lendemain, démoulez délicatement le cheesecake. Répartissez la compotée de fruits par-dessus et servez.
