Quiche à l’ail des ours, aux légumes de printemps et au chèvre
🇬🇧 While at home in England, Mum and I went foraging for wild garlic. We made three tubs of pesto and this quiche with spring onions, goat’s cheese and peas. Shooting outdoors was a challenge in the wind, but I’m pretty happy with the result.
🇫🇷 Pendant mon séjour chez moi en Angleterre, Maman et moi sommes parties à la cueillette de l’ail des ours. Nous avons fait trois boîtes de pesto et cette quiche aux oignons frais, au chèvre et aux petits pois. Le shooting dehors était compliqué avec le vent, mais je suis plutôt contente du résultat.

Ingredients
- 225 g plain flour
- 100 g cold butter
- 2-3 tbsp cold water
- 200 g soft goat’s cheese
- 100 g peas, fresh or frozen
- 3 spring onions
- 5 wild garlic leaves
- 3 large eggs
- 200 ml double cream
- Salt and pepper
1. Tip the flour Into a large mixing bowl. Cut the butter into small cubes and rub into the flour until the mixture resembles fine breadcrumbs. Add just enough cold water to form a ball of dough. Wrap the pastry in cling film and chill in the refrigerator for 30 minutes.
2. Roll out the pastry on a floured work surface and line a 26 cm tart tin. Prick the base with a fork. Chill for a further 20 minutes.
3. Preheat the oven to 180 °C. Cover the pastry case with greaseproof paper and fill with baking beans. Bake for 15 minutes then remove the beans and paper and bake for a further 5 minutes. Remove from the oven and turn down the temperature to 170 °C.
4. Crumble the goat’s cheese and scatter over the pastry case. Slice the spring onions and scatter them on top of the cheese along with the peas.
5. Whisk together the eggs and the cream, season with salt and pepper and the finely chopped garlic leaves. Pour this mixture into the pastry case and bake the quiche for 35 minutes. It should still be a little wobbly in the centre.

Ingrédients
- 225 g de farine T45
- 100 g de beurre froid
- 2-3 c. à soupe d’eau froide
- 200 g de chèvre frais
- 100 g de petits pois, frais ou surgelés
- 3 oignons frais
- 5 feuilles d’ail des ours
- 3 gros oeufs
- 20 cl de crème liquide
- Sel et poivre
1. Déposez la farine dans un grand saladier. Coupez le beurre en petits dés et mélangez du bout des doigts jusqu’à ce que le mélange ressemble à du sable. Ajoutez juste assez d’eau pour que la pâte forme une boule. Filmez et laissez reposer 30 minutes au réfrigérateur.
2. Étalez la pâte sur un plan de travail fariné et foncez un moule à tarte de 26 cm. Piquez le fond de pâte avec une fourchette. Placez au réfrigérateur pour encore 20 minutes.
3. Préchauffez le four à 180 °C. Recouvrez le fond de tarte de papier sulfurisé et garnissez de billes en céramique ou de haricots secs. Enfournez pour 15 minutes puis retirez les haricots et le papier et enfournez pour 5 minutes encore. Retirez du four et baissez la température à 170 °C.
4. Émiettez le fromage de chèvre et répartissez-le sur le fond de tarte. Émincez les oignons frais et répartissez sur le fromage avec les petits pois.
5. Battez ensemble les oeufs et la crème, salez et poivrez et ajoutez les feuilles d’ail des ours finement hachées. Versez ce mélange dans le fond de tarte et enfournez la quiche pour 35 minutes. Elle doit trembloter encore un peu au centre.
