Empanadas épicés avec sauce chimichurri
🇬🇧 Here is a quick and easy empanada recipe with ready-made puff pastry and a classic spicy beef filling, with pepper, olives and pine nuts. Dip each bite in the garlicky herby sauce for added spice.
🇫🇷 Voici une recette d’empanadas rapide et facile avec une pâte feuilletée prête à l’emploi et une garniture classique au boeuf épicé, au poivron, aux olives et aux pignons de pin. Ajoutez du piquant en trempant chaque bouchée dans la sauce aillée aux herbes.

Ingredients
- 1 onion
- 1 red pepper
- 500 g minced beef
- 2 tbsp paprika
- 1 tbsp cumin
- 1 tbsp herbes de Provence
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp salt
- 30 g raisins
- 20 pitted green olives
- 2 tbsp pine nuts
- 4 packs puff pastry (around 230 g each)
- 2 egg yolks
- Olive oil
For the chimichurri sauce
- 1 shallot
- 1/2 garlic clove
- 10 g fresh coriander
- 10 g fresh flat-leaf parsley
- 4 tbsp olive oil
- 1 tbsp white wine vinegar
- Pinch of chili flakes
- Pinch flaky sea salt
1. Peel and dice the onion. Cut the pepper in half, remove the stem, the seeds and the white membrane and cut into small cubes. Soak the raisins in a small bowl of water. Chop the olives in half lengthwise.
2. Heat a drizzle of olive oil in a large frying pan on high heat and add the onion and the pepper. Cook until the onion has softened and starts to caramelise. Add the minced beef and break it up with a wooden spoon, cook until browned. Add the spices and salt and cook for 1 minute, stirring regularly. Drain the raisins and add to the pan along with the chopped olives and the pine nuts. Mix well and leave to cook on a low heat for 10 minutes.
3. Preheat the oven to 190 °C. Roll out your puff pastry. You want it to be about 4 mm thick. Most ready-rolled pastry comes a lot thinner than this so be sure to gather it up into a ball and re-roll. If your pastry is too thin the empanadas will not be able to hold the filling and will break. Cut out 16 pastry circles with a 12 cm round cutter.
4. Place 1 tbsp of the beef mixture in the centre of each pastry circle. Fold in half and crimp the edges to seal. Whisk the egg yolks with 1 tsp water and brush over the empanadas. Bake for 25-30 minutes until golden brown.
5. While the empanadas are baking, blitz all the ingredients for the chimichurri sauce in a blender.
Tips
Empanadas freeze very well, if you want to keep some for another day, freeze them before egg washing. I recommend placing them on a baking tray to freeze before transferring to a freezer bag or container otherwise they will get stuck together.

- 1 oignon
- 1 poivron rouge
- 500 g de bœuf haché
- 2 c. à soupe de paprika
- 1 c. à soupe de cumin
- 1 c. à soupe d’herbes de Provence
- 1 c. à café de paprika fumé
- 1 c. à café de piment de Cayenne
- 1 c. à café de sel
- 30 g de raisins secs
- 20 olives vertes dénoyautées
- 2 c. à soupe de pignons de pin
- 4 paquets de pâte feuilletée (environ 230 g chacun)
- 2 jaunes d’œufs
- Huile d’olive
Pour la sauce chimichurri
- 1 échalote
- 1/2 gousse d’ail
- 10 g de coriandre fraîche
- 10 g de persil plat frais
- 4 c. à soupe d’huile d’olive
- 1 c. à soupe de vinaigre de vin blanc
- Une pincée de piment en flocons
- Une pincée de fleur de sel
1. Pelez et ciselez l’oignon. Coupez le poivron en deux, retirez la queue, les pépins et la membrane blanche et coupez en petits dés. Faites tremper les raisins secs dans un petit bol d’eau. Coupez les olives en deux dans la longueur.
2. Faites chauffer un filet d’huile d’olive dans une grande poêle sur feu vif et ajoutez l’oignon et le poivron. Faites revenir jusqu’à ce que l’oignon soit fondu et commence à caraméliser. Ajoutez le bœuf haché et cassez-le en morceaux à l’aide d’une cuillère en bois, faites dorer. Ajoutez les épices et le sel et faites cuire, en remuant régulièrement, pendant 1 minute. Égouttez les raisins secs et ajoutez-les à la poêle ainsi que les olives et les pignons de pin. Mélangez bien et laissez cuire à feu doux pendant 10 minutes.
3. Préchauffez le four à 190 °C. Déroulez votre pâte feuilletée. Elle doit faire environ 4 mm d’épaisseur. La plupart des pâtes prêtes à l’emploi sont plus fines, il faut donc la ramasser en boule et l’étaler de nouveau. Si votre pâte est trop fine, les empanadas ne tiendront pas la farce et ils casseront. Découpez 16 ronds de pâte avec un emporte-pièce de 12 cm.
4. Déposez 1 cuillerée à soupe de la farce au bœuf au centre de chaque rond de pâte. Pliez en deux et chiquetez les bords pour fermer. Battez ensemble les jaunes d’œuf et 1 cuillerée à café d’eau et badigeonnez sur les empanadas. Enfournez pendant 25-30 minutes jusqu’à ce qu’ils soient dorés. 5. Pendant que les empanadas cuisent, mixez au blender l’ensemble des ingrédients pour la sauce chimichurri.
Astuce
Les empanadas se congèlent très bien, si vous souhaitez en conserver pour un autre jour, placez-les au congélateur freeze very well, if you want to keep some for another day, freeze them before egg washing.
