Apricot and lavender tart

🇬🇧 I roasted some apricots in lavender honey and filled a pastry case with lavender infused crème pâtissière. This actually gets better over time in the fridge as the lavender flavour gets stronger. Be sure to freeze your pastry in the tart tin and bake directly from frozen. This will stop the pastry shrinking.

🇬🇧 For 4 people (22 cm tart)
Preparation time: 1 hour 30
Rest time: 1 night + 4 hours
Cooking time : 50 minutes

Ingredients

For the pastry:

  • 250g plain flour
  • 125g unsalted butter, cold
  • 2 egg yolks
  • 60g caster sugar
  • 3 tbsp cold water
  • Pinch salt

For the crème pâtissière:

  • 500ml almond milk
  • 1 tbsp dried lavender
  • 80g caster sugar
  • 100g egg yolks (around 5 large eggs)
  • 45g cornflour

For the roasted apricots:

  • 12 apricots
  • 1 tsp dried lavender
  • 2 tbsp lavender honey

1. The night before, combine the milk and dried lavender in a jug and chill overnight.
2. The next day, pour the flour and salt into a mixing bowl then add the cold butter chopped into small cubes. Rub between your fingertips until the mixture resembles fine breadcrumbs. Add 1 egg yolk and the sugar and mix with a wooden spoon. Add the water little by little and knead lightly until you can form a ball with the dough. Flatten the ball slightly and wrap in cling film. Chill in the freezer for 10 minutes.
3. Roll the pastry out and line your tart tin. Freeze for at least 2 hours.
4. Meanwhile, preheat the oven to 180 °C. Cut the apricots in half and remove the stones. Place in a baking tray and drizzle over the honey. Brush the apricots to make sure they are all coated in honey, then sprinkle over the lavender. Roast for 20 minutes then leave to cool. Turn off the oven, but preheat again at 180 °C 15 minutes before the pastry is ready.
5. Once the pastry is frozen, cover the frozen pastry base with baking paper and fill with baking beans. Bake for 15 minutes then remove the baking beans and paper. Beat the remaining egg yolk with 1 tbsp water and brush this over the pastry base. Return to the oven uncovered for an additional 15 minutes. Leave to cool while you make the filling.
6. In a large bowl, whisk half of the sugar with the egg yolks and the cornflour.
7. Heat the milk, the rest of the sugar and the lavender in a saucepan. Before it reaches boiling point, remove from the heat and strain. Pour the milk back into the pan. Gradually add 3 ladlefuls of hot milk to the egg yolk mix, whisking constantly to prevent lumps from forming. Pour the egg yolk mix into the saucepan and gently heat while whisking until the cream thickens. Pour the crème pâtissière into the pastry base and smooth with a spatula.
8. Arrange the roasted apricots on top of the tart and refrigerate for at least 2 hours before serving.

🇫🇷 Pour 4 personnes (tarte de 22 cm)
Préparation : 1 heure 30
Repos : 1 nuit + 4 heures
Cuisson : 50 minutes

Ingrédients

Pour la pâte :

  • 250 g de farine T45
  • 125 g de beurre doux, froid
  • 2 jaunes d’oeufs
  • 60 g de sucre en poudre
  • 3 c. à soupe d’eau froide
  • Une pincée de sel

Pour la crème pâtissière :

  • 50 cl de lait d’amande
  • 1 c. à soupe de lavande séchée
  • 80 g de sucre en poudre
  • 100 g de jaunes d’oeufs (environ 5 gros oeufs)
  • 45 g de fécule de maïs

Pour les abricots rôtis :

  • 12 abricots
  • 1 c. à café de lavande séchée
  • 2 c. à soupe de miel de lavande
