Baklava galette des rois

Galette des rois façon baklava

🇬🇧 I could say I am posting my three kings cake recipe fashionably late, one week after Epiphany, but in all honesty, I’ve actually been very busy with work at the beginning of this new year. Personally, I’m not a huge fan of French galettes, puff pastry filled with almond cream, but this version brings more texture and crunch with the pistachios, almonds and walnuts. When it comes out of the oven, you pour over a honey and orange blossom syrup: oriental flavours that perhaps make more sense for a cake that celebrates the arrival of the three wise men.

Ingredients

  • 10 sheets of filo pastry
  • 100g pistachios
  • 100g almonds
  • 100g walnuts
  • 5 tbsp orange blossom water
  • 200g honey + 2 tbsp
  • 200g unsalted butter
  • 100g caster sugar
  • 140g ground almonds
  • 2 eggs + 1 yolk

1. Preheat the oven to 180 °C. Toast the pistachios, walnuts and almonds for 10 min, then chop finely. Mix half of the nuts with 2 tbsp orange blossom water and 2 tbsp honey. Reserve the remaining chopped nuts for the decoration.

2. For the almond cream, beat 75g soft butter with the sugar, the ground almonds, the eggs and the extra yolk. Set aside.

3. Melt 125g butter. Brush some butter over the base and sides of a 10-inch wide and 4-cm high cake tin. Place 1 sheet of filo pastry in the bottom, with half of the sheet coming out of the tin. Layer up the 9 remaining filo sheets, overlapping them to cover the base, with half of each sheet coming out of the tin. Brush each layer with melted butter.

4. Spread the honey and orange blossom nuts into the base of the tin, press to pack down, then spoon the almond cream on top. Fold each layer of filo towards the centre on top of the almond cream, buttering each layer as you go les fruits secs au miel et à la fleur d’oranger sur la pâte filo, tassez bien puis étalez la crème d’amandes par-dessus.

5. Meanwhile, make a syrup by bringing 200g honey and 3 tbsp orange blossom water to the boil. When the galette comes out of the oven, pour the syrup over the top and sprinkle over the remaining chopped nuts. Leave to cool before removing from the tin.

Ingrédients

  • 10 feuilles de pâte filo
  • 100 g de pistaches
  • 100 g d’amandes
  • 100 g de noix
  • 5 c. à s. d’eau de fleur d’oranger
  • 200 g de miel + 2 c. à s.
  • 200 g de beurre doux
  • 100 g de sucre en poudre
  • 140 g de poudre d’amandes
  • 2 œufs + 1 jaune
