Homemade tortellini in oxtail broth
🇬🇧 Yesterday my friend Francesca came over and we made tortellini in brodo while watching Pasta Grannies on Youtube. Francesca introduced me to this dish from Emilia Romagna, where Parma ham and parmesan tortellini are cooked in an oxtail broth. If you’ve got a whole day to kill, I really recommend it. But roping a friend in to help you shape the tortellini is mandatory. You could of course just make the broth and buy the pasta.

Francesca m’a prĂ©sentĂ© ce plat originaire de l’Emiglia Romagna, oĂą des tortellini au jambon de Parme et au parmesan sont cuits dans un bouillon de queue de boeuf. Si vous avez toute une journĂ©e Ă tuer, je le recommande vivement. Mais, il faut absolument convaincre un ami de t’aider en cuisine. Bien entendu, il est tout Ă fait possible de ne faire que le bouillon maison et d’acheter des pâtes dans le commerce.

Ingredients
For the broth:
- 1 oxtail cut into pieces   
- 2 carrots   
- 1 onion   
- 1 bay leaf   
- 5 sprigs thyme   
- 10 sage leaves   
- 1 sprig rosemary   
- 2 tsp salt   
For the tortellini:
- 400g plain or ideally 00 flour  
- 5 eggs  
- 80g prosciutto crudo di Parma  
- 40g grated parmesan  
- Black pepper  
- Pinch nutmeg  
1. To make the broth, peel the carrots and onion. Cut the onion in half. Pour 5 litres water into a large pot and add the oxtail, carrots, onions, herbs tied together in a bouquet garni, and the salt. Bring to the boil then reduce to a simmer, cover and cook for 4 hours. Every hour you will need to add 1 mug of water.   
2. For the pasta, place the flour in a large bowl and make a well in the centre. Crack 4 eggs inside and whisk with a fork, slowly incorporating the flour. Mix with your hands, adding a little water, then turn the dough out onto a floured work surface and knead for around 10 minutes. Wrap in cling film and leave to rest at room temp for at least 1 hour. 
3. To make the filling cut the prosciutto with the fat as finely as possible. Mix with the parmesan, 1 egg, black pepper and nutmeg.
4. Divide the dough into around 8 portions and roll out with a pasta machine. Keep the dough you are not using covered in cling film so it doesn’t dry out. For filled pasta, I roll from 7 down to 4. Any thinner and the filling will break through. Cut the pasta sheets into squares around 3 x 3 cm. Place a small amount of filling (about the size of the rubber on the end of a pencil) in the centre of each square, wet the edges with water, fold in half to make a triangle then pull the two long ends together to form a tortellino. Leave your tortellini to dry out for around 1 hour on wooden boards dusted with flour.  
5. Strain the broth and cut the meat off the bones. Return the broth and meat to the pot and bring to the boil. Cook the homemade tortellini for 3-4 minutes then serve with the broth and a sprinkling of parmesan.

Ingrédients
Pour le bouillon:
- 1 queue de boeuf coupée en morceaux
- 2 carottes   
- 1 oignon   
- 1 feuille de laurier   
- 5 brins de thym  
- 10 feuilles de sauge   
- 1 branche de romarin   
- 2 c. à café de sel   
Pour les tortellini:
- 400 g de farine T45 ou idéalement 00  
- 5 oeufs  
- 80 g de prosciutto crudo di Parma  
- 40 g de parmesan râpé
- Poivre noir  
- Une pincée de noix de muscade
1. Pour le bouillon, pelez les carottes et l’oignon. Coupez l’oignon en deux. Versez 5 litres d’eau dans une grande cocotte et ajoutez la queue de boeuf, les carottes, l’oignon, les herbes ficelĂ©es ensemble en bouquet garni, et le sel. Portez Ă Ă©bullition puis baissez le feu Ă frĂ©missement, couvrez et laissez cuire 4 heures. Toutes les heures il faut ajouter 1 verre d’eau.
2. Pour les pâtes, dĂ©posez la farine dans un grand saladier et faites un puits au centre. Cassez 4 oeufs au centre et fouettez Ă la fourchette, incorporant petit Ă petit la farine. MĂ©langez Ă la main, ajoutez un peu d’eau si la pâte est sèche, puis retournez-la sur un plan de travail farinĂ© et pĂ©trissez pendant environ 10 minutes. Filmez et laissez reposer au moins 1 heure Ă tempĂ©rature ambiante.
3. Pour la farce, ciselez le prosciutto avec le gras aussi finement que possible. Dans un bol mélangez le jambon avec le parmesan, 1 oeuf, du poivre noir et la noix de muscade.
4. Divisez la pâte en 8 boules et étalez chacune à la machine à pâtes. Conservez la pâte que vous n’utilisez pas emballée dans du film pour éviter qu’elle ne devienne sèche. Pour les pâtes farcies, j’étale du cran 7 à 4. Si elle est plus fine la farce percera la pâte. Découpez les feuilles de pâte en carrés de 3 x 3 cm. Déposez une pointe de farce (de la taille de la gomme au bout d’un crayon) au centre de chaque carré, mouillez les bords avec de l’eau, pliez en deux pour former un triangle puis soudez les deux extrémités les plus longues pour faire un tortellino. Laissez vos tortellini sécher environ 1 heure sur des planches en bois farinées.
5. Filtrez le bouillon et détachez la viande des os. Retournez le bouillon et la viande à la cocotte et portez à ébullition. Faites-y cuire les tortellini faits maison pendant 3-4 minutes puis servez avec du bouillon et saupoudrez de parmesan.
